Cocktails
30-40 glasses of Pimms
1 part Pimms and 3 parts lemonade
For a punch
2 bottles of Pimms
2 x 2l bottles of chilled lemonade
6 oranges sliced and halved
3 lemons - sliced
1 punnet of strawberries - cut
Fresh mint & Ice
26 servings of Cranberry Fruit Punch
2 x 1l of cranberry juice
1 x 1l of grape juice
1 x 1l grapefruit juice
Mix the above together
3 limes cut into 8 slices each
Ice & Fresh mint
To serve place ice in a glass with a slice of lime add the above mix & mint
25 servings of Moscow Mule
Mix 1 x 70cl of Vodka with 1 pint of lime juice.
2 x 2l of ginger beer
Ice
25 slices of fresh lime
To serve place ice in a glass with a lime slice. Add the mix and top with ginger beer.
25 Gin, Elderflower & Cucumber Cooler
500ml of elderflower cordial
400ml of gin
4 cucumbers
Ice
Sprig of mint
1l of chilled soda
Put cordial and cucumber into a processor and mix. Pass through a fine sieve and add gin.
To serve place ice in a glass, add the mix and mint and top with soda.
Orange County (each)
25ml of vodka
25ml of cointreau
15ml of fresh line juice
35ml of fresh orange juice
Pour all ingredients into a shaker, fill with ice & shake. Then strain into a chilled cocktail glass and add a twist of orange zest for decoration.
Red Dawn (each)
50ml of bacardi
15ml of fresh lime juice
75ml of raspberry puree
25ml of cranberry juice
Topped up with ginger beer
Pour all the non-sparkling ingredients into a shaker, add ice, shake the strain into an ice filled glass & top up with ginger beer. A fresh raspberry garnish looks nice,
Elderflower Cordial
20 elderflower heads (no brown bits!)
Infuse in 2 pints of boiling water adding 2lb (900g) sugar and a sliced lemon, and 2tsp citric acid.
Stir until sugar dissolves, removing any scum and cover with a piece of cotton.
Leave to soak for 4 days, stirring twice daily, then strain through a fine sieve and decant into sterile bottles.
Store for up to a month in the fridge or can be frozen.
Dilute in water or mix with vodka and a touch of lemon!!
